Hi Lauren, Pololu Valley: hike down to switchback #3 or 5 for good views into the valley and really great views along the Hamakua Coast. The coast view can be fantastic at sunrise. The trail is rocky, uneven, and often slippery/muddy, but if that either doesn't put you off or actually excites you, this is one of my top recommendations for experiencing the Big Island. Hiking all the way to the beach at the valley floor is certainly a great experience and more photo opportunities, but I don't think that down at the beach will give the best views of the valley itself. Muliwai Trail: It's been many years since I hiked that trail from Waipio to Waimanu. As I recall, there were excellent views back into Waipio Valley from the cliff-side switchbacks up the trail on the west side of Waipio Valley. It is not an easy trail, with tall stair-step sections that killed my knees on the return trip back down, but if you're an experienced hiker and in good shape, by all means do that trail, and spend as much time as possible in the valley and on the beautiful black sand beach. The view from the official viewpoint on the east side of Waipio Valley (end of the highway) is actually really good, again both for looking into Waipio Valley and along the Hamakua Coast. Mid-morning is a good time for photography here.
